BBQ Chicken & Cheese Grits


  • 1.25 lbs Chicken Breast

  • 2/3 Cup Sweet Baby Ray’s No Sugar Added BBQ Sauce

  • 1 Cup Quaker Oats 5 Minute Grits

  • 2 Cups Whole Milk

  • 2 Cups Water

  • 1 Cup Sharp Cheddar Cheese

  • 3 Tbsp Butter

  • 1/2 tsp Salt

  • 5 Cups Green Beans

  • Salt and Pepper to taste


  1. Preheat oven to 400F.

  2. Add milk and water to a pot. Bring to a boil over medium heat while stirring occasionally to prevent the milk from burning to the bottom of the pot. Mix in grits.

  3. Reduce temperature to low and cover. Simmer for 5-7 minutes, or until the mixture thickens. Stir occasionally to avoid grits sticking to the bottom of the pot.

  4. Add butter and shredded cheese to the thickened grits. Stir until combined. Set aside.

  5. Line baking sheet with aluminum foil. Evenly distribute green beans onto the baking sheet. Spritz with olive oil. Season with salt and pepper to taste. Bake in the oven for 15-17 minutes.

  6. On a cutting board, slice chicken into strips. Season with salt & pepper.

  7. Place chicken on the grill, cooking for 10-12 minutes, flipping the strips halfway through. Use half of the BBQ sauce to baste the strips.

  8. Evenly distribute chicken, grits, and green beans into 5 containers. Top with the remaining BBQ sauce.
