Buffalo Chicken Meatballs with Mashed Potatoes & Green Beans



  • 1 lbs Ground Chicken

  • 1 Egg, slightly beaten

  • 1 Cup Oatmeal

  • 1 Cup Blue Cheese Crumbles

  • 1/2 Cup Mozzarella Cheese

  • 1/2 Cup Onion, diced 1/2 Cup Celery, diced

  • 1/4 Cup Hot Sauce

Mashed potatoes:

  • 1.5 lbs Red Potatoes

  • 3/4 Cup Broth

  • 1/2 Cup 2% Milk

  • 1 Tbsp Butter

  • 1/4 Cup Chives

Green Beans:

  • 1 lbs Green Beans

  • 1 Tbsp Olive Oil

  • Salt and Pepper, to taste


  1. Preheat oven to 350F.

  2. Add all of the meatball ingredients except for the ground chicken to a large bowl and mix well.

  3. Add ground chicken and mix until combined.

  4. Portion chicken into even ball forms and place on baking sheet.

  5. Bake uncovered for about 30 minutes.

  6. Add whole potatoes and broth to Instant Pot. Pressure cook on high for 7 minutes.

  7. On medium heat, add 1/4 inch water to medium sauce pan. Add in green beans, steam for 7 minutes. Drain liquid from pan. Saute with olive oil, salt and pepper to taste. Remove from heat.

  8. Release pressure from instant pot. Add butter, milk, garlic powder and salt and pepper to taste. Mash with potato masher. Garnish with chives.

  9. Portion meatballs, mashed potatoes and green beans into 5 separate containers.
