Carnitas Tacos

Ingredients:

  • 1 1/2 lbs of Pork Tenderloin, sliced

  • 1 Tbsp Olive Oil

  • 1/2 Cup Beef Broth

  • 1 Onion, chopped

  • 3 Cloves of Garlic

  • 1/2 Cup of Carrots, chopped

  • 1 Dried Chili Pepper

  • 3 Thyme Sprouts

  • 3 Bay Leaves

  • 2 Tomatoes, diced

  • 1 tsp Cumin

  • 1 tsp Ground Cloves

  • 1 tsp Paprika

  • 2 Limes

  • 1 Cup Purple Cabbage

  • 2 1/2 oz Cup Greek Yogurt

  • 100 Cal Guacamole Cup

  • 1 Cup Mexican Cheese

  • 10 Mini Tortillas


Directions:

  1. Lightly spray the bottom of the instant pot with the olive oil. Add in pork, beef broth, garlic, cumin, paprika, salt and pepper. Pressure cook on high for 40 minutes.

  2. In a pan, add in the olive oil, onion, carrots, chili pepper, thyme, and bay leaves. Season with salt & pepper. Cook until tender. Add in 1 tomato and cook for 2 minutes.

  3. In a small bowl, mix together the greek yogurt, guacamole, salt and juice of 1/2 a lime. Add a touch of salt to taste. Separate into 5 small to-go cups. Cut remaining lime into 5 wedges.

  4. Once the pork is done cooking, release pressure. Use 2 forks to shred the pork. Then, pour in veggie mixture. Evenly distribute the pork, cheese, uncooked tomato & cabbage.
