Carnitas Tacos

Ingredients:

  • 1.5lbs of Pork Tenderloin, sliced

  • 1 Tbsp Olive Oil

  • 1/2 Cup Beef Broth

  • 1 Onion, chopped

  • 3 Cloves of Garlic

  • 1/2 Cup of Carrots, chopped

  • 2 Tomatoes, diced

  • 3 Thyme Sprouts

  • 3 Bay Leaves

  • 1 tsp Red Pepper Flakes

  • 1 tsp Cumin

  • 1 tsp Ground Cloves

  • 1 tsp Paprika

  • 1 Lime

  • 2 tsp Lime Juice

  • 1 Cup Shredded Purple Cabbage

  • 5.3oz Greek Yogurt

  • 100 Cal Guacamole Cup

  • 1 Cup Mexican Cheese

  • 10 Mini Mission Tortillas


Directions:

  1. Lightly spray the bottom of the instant pot with olive oil. Add in pork, beef broth, garlic, cumin, paprika, cloves, thyme, bay leaves, salt and pepper. Pressure cook on high for 40 minutes.

  2. In a medium pan, add in the olive oil and heat for 2 minutes. Then, add the onion, carrots, and red pepper flakes. Season with salt & pepper. Cook until tender. Add in tomatoes and cook for 4 additional minutes. Set aside.

  3. In a small bowl, mix together the greek yogurt, guacamole, and lime juice. Add salt to taste. Separate into 5 small to-go cups. Set aside.

  4. Cut the lime into 5 wedges. Set aside

  5. Once the pork is done cooking, release pressure. Use 2 forks to shred the pork.

  6. Evenly distribute the tortillas (2 per meal), pork, veggie mixture, cheese, cabbage, guacamole dip, and lime wedges.
