Chicken Bruschetta


  • 5 Chicken Cutlets

  • 1 Tbsp Italian Seasoning

  • 3 tsp Minced Garlic

  • 1 6oz Gag Spinach

  • 14oz Farfalle Pasta

  • 1 Pint Grape Tomatoes, chopped finely

  • 1/2 Small Red Onion, chopped finely

  • 1/4 Cup Fresh Basil, chopped

  • 2 Tbsp Oil

  • 1/2 Cup Shredded Mozzarella Cheese

  • 1/4 cup Balsamic Vinegar

  • Salt & Pepper, to taste


  1. Season chicken with Italian seasonings, garlic, salt & pepper

  2. Spray grill with oil, turn on high. Sear each side of the chicken, about 6-7 minutes on each side. Remove from pan and let rest.

  3. Boil water for pasta, once it reaches a rapid boil, add pasta and cook according to box and drain, transfer into a different plate.

  4. Sauté spinach with salt and pepper, once cooked through add the pasta back to the pot and mix together.

  5. Finely chop tomatoes, red onion, and basil. Mix in a large bowl with olive oil and salt.

  6. Distribute chicken into 5 containers and top with bruschetta mixture, cheese, and drizzle with balsamic.
