5 Chicken Cutlets
1 Tbsp Italian Seasoning
3 tsp Minced Garlic
1 6oz Gag Spinach
14oz Farfalle Pasta
1 Pint Grape Tomatoes, chopped finely
1/2 Small Red Onion, chopped finely
1/4 Cup Fresh Basil, chopped
2 Tbsp Oil
1/2 Cup Shredded Mozzarella Cheese
1/4 cup Balsamic Vinegar
Salt & Pepper, to taste
Season chicken with Italian seasonings, garlic, salt & pepper
Spray grill with oil, turn on high. Sear each side of the chicken, about 6-7 minutes on each side. Remove from pan and let rest.
Boil water for pasta, once it reaches a rapid boil, add pasta and cook according to box and drain, transfer into a different plate.
Sauté spinach with salt and pepper, once cooked through add the pasta back to the pot and mix together.
Finely chop tomatoes, red onion, and basil. Mix in a large bowl with olive oil and salt.
Distribute chicken into 5 containers and top with bruschetta mixture, cheese, and drizzle with balsamic.
