Chicken Lo Mein

Stir Fry Ingredients:

  • 1 lb Chicken Breast, Sliced in Strips

  • 2 Tbsp Soy Sauce

  • 3 Tbsp Olive Oil, Divided

  • 15 oz Lo Mein Noodles

  • 2 Cups Broccoli

  • 1 Cup Carrots, Chopped

  • 1 Red Pepper, Chopped

  • 2 Cup Sugar Snap Peas

  • 1/2 Cup Water Chestnuts

  • 1 Can Baby Corn

Sauce Ingredients:

  • 1/4 Cup Soy Sauce

  • 1/3 Cup Apricot Jam

  • 2 Cloves Garlic, Minced

  • 2 Tbsp Brown Sugar

  • 1 tsp Sesame Oil

  • 1/2 tsp White Vinegar

  • 1 tsp Corn Starch

  • 1 Tbsp Sesame Seeds, to top


  1. Start by making the sauce, combine all sauce ingredients whisking until blended.

  2. Cut chicken breast into 1/2 inch strips and toss in 2 Tbsp of soy sauce

  3. Cook noodles per package instructions until "Al-dente"

  4. Heat 2 Tbsp of oil in a large skillet over medium-high heat

  5. Add chicken to the pan and cook, stirring frequently until chicken is no longer pink

  6. Heat an additional 1 Tbsp of oil in skillet and add vegetables and water chestnuts. Stir-fry by moving the vegetables around the pan quickly, until they are just tender

  7. When veggies are done, add the chicken, and noodle to the pan. Pour the sauce mixture over the entire pan, stir to combine, and cook for an additional 2 minutes

  8. Remove from heat and separate into 5 separate containers. Top with sesame seeds
