Chorizo Breakfast Bowl

Ingredients:

  • 3 Chorizo Sausages

  • 3 Golden Potatoes

  • 1 Bell Pepper

  • 1 Onion

  • 1 Can Black Beans

  • 1 Tbsp Olive Oil

  • 3 Cloves Garlic

  • 6 Eggs

  • 1 Cup Shredded Mexican Blend Cheese

  • 1 Cup Cherry Tomatoes

  • 1/4 Cup Cilantro

  • Salt & Pepper

Directions:

  1. Slice sausages, potatoes, pepper, and onion into one-inch pieces

  2. Slice tomatoes in half and prick off cilantro leaves, set aside to top at end.

  3. Boil water with salt, add potatoes and cook until tender (6 minutes).

  4. In separate pan, heat olive oil on medium heat adding onion, pepper, garlic. Once cooked add chorizo. Stir consistently and add salt and pepper.

  5. In a medium bowl, and scramble eggs with salt and pepper.

  6. When vegetables and meat are cooked, push them to the sides of the pan to make a hole in the middle to cook the eggs. Add eggs to pan stirring frequently. Once eggs are cooked, stir to combine all ingredients in the pan.

  7. When the potatoes are done cooking, drain and add to the other pan. Add cheese and black beans to the pan and mix all ingredients together at a low heat until cheese melts.

  8. Divide mixture evenly between 5 containers and top with sliced tomatoes and cilantro.
