2 Pounds Chicken Thighs
1 Cup Quinoa
2 Cups Chicken Broth
3 Medium Heads of Broccoli
2 Cloves of Garlic
1 Small Onion
2-3 Tbsp Everything but the Bagel Seasoning
1 Tbsp Olive Oil
Salt and Pepper to taste
1. Spray chicken thighs with olive oil, sprinkle evenly with Everything But the Bagel Seasoning. Place seasoned thighs in air fryer basket skin side up, spray with olive oil. Set air fryer to 380 degrees and set timer for 18 mins.
2. Set oven to 425 degrees. Chop broccoli, onion and mince garlic- add to baking sheet. Drizzle 1 tbsp of olive oil. Bake for 20 mins.
3. Bring 2 cups of chicken stock to a boil. Add in 1 cup of quinoa, reduce to a simmer, cover and let cook for 30 mins.
4. Measure out 4oz chicken thighs, 1 cup of broccoli and 1/2 cup of quinoa into 5 small containers. Enjoy!
