
Fritters & Broccoli Cheddar Soup

Ingredients:
Fritters
2 Medium Zucchinis, Grated
1 tsp Salt
1/4 Cup Flour
1/4 Cup Parmesan Cheese
2 Cloves Garlic, Minced
1 Egg
1 5.3oz Container Greek Yogurt
1 tsp Garlic Powder
1 tsp Chives
Broccoli & Cheddar Soup:
4 Tbsp Butter
1/2 Onion, Diced
1/4 Cup Flour
2 Cups Fairlife Milk
2 Cups Chicken Broth
2 Cups Broccoli Florets
1 Cup Matchstick Carrots
2 1/2 Cups Cheddar Cheese
Directions:
Melt butter in a large skillet over medium heat. Add in the onion and 1/4c flour. Cook until thickened.
Gradually pour milk into flour mixture, stirring constantly. Stir in chicken broth, broccoli, and carrots. Bring to a simmer & cook for about 22 minutes.
Stir cheddar cheese into vegetable mixture until cheese melts. Season with salt and pepper to taste.
Meanwhile, place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a cheese cloth, drain zucchini completely.
In a large bowl, combine zucchini, flour, Parmesan, garlic and egg. Season with salt and pepper.
Heat a large skillet over medium high heat & grease lightly. Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook about 2 minutes per side.
Mix garlic powder, chives, and salt into greek yogurt & portion out into 5 small to-go cups. Evenly distribute fritters into 5 baggies & soup into 5 containers. (dipping sauce for fritters).
