
Ginger Pork & Cucumber Salad
Ingredients: Pork
1 Cup Rice
1.5 lbs Ground Pork
1 Tbsp Olive Oil
2 tsp Garlic Stir-in Paste
2 tbsp Ginger Stir-in Paste
1 Tbsp Crushed Red Chili Pepper Flakes
2 Tbsp Lime Juice
1 Tbsp Soy Sauce
Salt & Pepper to Taste
Salad
1/4 Cup Lime Juice
1½ Tbsp Soy Sauce
½ tsp Ginger
1 tsp Brown Sugar
2 Seedless English Cucumbers
2 Scallions
1 Cup Fresh Cilantro, Chopped
½ Cup Fresh Mint, Chopped
Salt to Taste
Directions:
In a medium pot, add 2 cups of water to 1 cup of rice. Bring to a boil uncovered. Then, cover and place on low for 15 minutes. Set aside.
Heat olive oil for 1-2 minutes in a medium pan over medium heat. Add ground pork, chili flakes, ginger, garlic, salt & pepper. Cook until no longer pink, about 6-7 minutes.
Once meat is browned, remove pan from heat. Toss with lime juice and soy sauce.
Prepare the salad dressing by whisking together lime juice, soy sauce, ginger, and brown sugar.
Thinly slice cucumbers and scallions. Then, toss in dressing. Gently fold cilantro and mint into the salad.
Evenly distribute rice, salad, and pork into 5 separate containers.
