
Jambalaya
Ingredients:
2 Chicken Breast
2 Andouille Sausage
1 Cup White Rice
2 Cup Water
1 Tbsp Olive Oil
1 Onion
1 Bell Pepper
1 Tbsp Garlic
1 (15 oz) Can Crushed Tomatoes
1/4 Cup Hot Sauce
1 tsp Red Pepper Flakes
1 tsp Cayenne Pepper
Salt & Pepper
Directions:
In a medium pot, add 2 cups of water to 1 cup of rice. Bring to a boil uncovered. Then, cover and place on low for 15 minutes. Set aside.
Finely chop the onion and pepper.
Dice the sausage and chicken into bite size pieces.
In a large pot, heat olive oil over medium heat. Add onion, pepper, garlic, sausage, and chicken. Cook for 6-7 minutes, or until chicken is no longer pink.
Once cooked, add tomato sauce, hot sauce, red pepper flakes, cayenne pepper, salt, and pepper. Stir well and let mixture simmer for a 2-5 minutes.
Add cooked rice to the large pot and stir until combined.
Distribute evenly into 5 containers.
