Jambalaya

Ingredients:

  • 2 Chicken Breast

  • 2 Andouille Sausage

  • 1 Cup White Rice

  • 2 Cup Water

  • 1 Tbsp Olive Oil

  • 1 Onion

  • 1 Bell Pepper

  • 1 Tbsp Garlic

  • 1 (15 oz) Can Crushed Tomatoes

  • 1/4 Cup Hot Sauce

  • 1 tsp Red Pepper Flakes

  • 1 tsp Cayenne Pepper

  • Salt & Pepper


Directions:

  1. In a medium pot, add 2 cups of water to 1 cup of rice. Bring to a boil uncovered. Then, cover and place on low for 15 minutes. Set aside.

  2. Finely chop the onion and pepper.

  3. Dice the sausage and chicken into bite size pieces.

  4. In a large pot, heat olive oil over medium heat. Add onion, pepper, garlic, sausage, and chicken. Cook for 6-7 minutes, or until chicken is no longer pink.

  5. Once cooked, add tomato sauce, hot sauce, red pepper flakes, cayenne pepper, salt, and pepper. Stir well and let mixture simmer for a 2-5 minutes.

  6. Add cooked rice to the large pot and stir until combined.

  7. Distribute evenly into 5 containers.
