Mediterranean Kebob Platter

Ingredients:

Hummus:

1 Can Chickpeas, drained

3 Tbsp Lemon Juice

1/4 Cup Tahini

1 Tbsp Olive Oil

1/2 Tbsp Garlic

1/2 tsp Cumin

1/2 tsp Salt


Kebobs:

1lb Ground Chicken

1lb Ground Beef

1 Onion, diced

1/2 Cup Parsley

2 Tbsp Flour

1 1/2 tsp Salt

1 tsp Pepper


Sides:

3/4 Cup White Rice

1 Cup Cherry Tomatoes

5 Mini Cucumbers

2 Lemons

1 Cup Parsley

1 Tbsp Ground Sumac


Directions:

Hummus:

  1. Drain water from 1 can of chickpeas and rinse. Put all ingredients into a blender and puree.

Kebob:

  1. In a bowl, mix together beef, 1 tsp cumin, 1/3 the onion, 1/4 cup parsley leaves, 3/4 tsp salt and 1/2 tsp pepper.

  2. Once evenly mixed, form 5 chunks and form each chunk around a skewer

  3. Then, mix together chicken, flour, 1 tsp cumin, 1/3 the onion, 1/4 cup parsley leaves, 3/4 tsp salt, 1/2 tsp pepper.

  4. Once evenly mixed, form 5 chunks and form each chunk around a skewer

  5. Lightly grease grill and cook kabobs

Rice:

  1. Pour 1 1/4 cup water and rice into small pot.

  2. Bring water to a boil uncovered. Then reduce heat to low and cook for 14 minutes covered.

To Plate:

  1. Evenly distribute remaining ingredients, including remaining onion. Top with sumac & lemon juice
