
Mediterranean Rice Bowl
Ingredients:
1 Cup Jasmine Rice
3 Tbsp Olive Oil, separated
1 Tbsp Chicken Bouillon Powder
2 Cups Water
1 lb Chicken Breast, cubed
2 tsp All-Spice
1 Pint Cherry Tomatoes, halved
1 English Cucumber, diced
1/4 Cup Parsley, chopped
1/4 Cup Basil, chopped
1 Tbsp Garlic Powder
2 Tbsp Lemon Juice
1 Can Chickpeas, rinsed
1/2 Cup Feta
1/4 Cup Black Olives
10 Tbsp Tzatziki Sauce
Directions:
In a small pot, add 1 Tbsp of olive oil to 1 cup of rice. Saute rice for 1-2 minutes on medium heat. Add salt, pepper, 1 Tbsp bouillon powder, and 2 cups of water. Bring to a boil uncovered, then simmer for 15 minutes with the lid on. Set aside.
Cube chicken into small pieces. Toss with 1 Tbsp olive oil, all-spice, salt & pepper. Sautee in a medium skillet over medium heat. Cook until no longer pink.
Halve tomatoes, dice cucumber and chop parsley & basil. Add to a mixing bowl along with 1 Tbsp olive oil, lemon juice, garlic powder, salt & pepper to taste. Mix until combined.
Evenly distribute rice, chicken, and tomato cucumber salad into 5 separate containers. Top with chickpeas, feta, and black olives. Serve with 2 Tbsp Tzatziki Sauce.
