
New England Clam Cauliflower Chowder
Ingredients:
1 Head of Cauliflower
2 Cups Chicken Bone Broth
1 5.6oz Container Greek Yogurt
1 Cup 2% Milk
12oz Clams
3/4 Cup Corn
3/4 Cup Peas
1/4 Cup White Flour
2 Tbsp Duck Fat, sub Olive Oil
3 Cloves of Garlic
Salt & Pepper
2 Tbsp Garlic Powder
2 Tbsp Onion Powder
1/2 Cup Thyme
Directions:
Chop cauliflower off stalk and place in pot with enough water to cover. Boil on high for 25 minutes.
Drain and puree the cauliflower with 3 garlic cloves.
In a large pot over low-medium heat, add in all ingreidentsand mix all until combined. Cook for 17-20 minutes.
Season to your liking and serve hot.
