New England Clam Cauliflower Chowder

Ingredients:

  • 1 Head of Cauliflower ⁣

  • 2 Cups Chicken Bone Broth⁣

  • 1 5.6oz Container Greek Yogurt ⁣

  • 1 Cup 2% Milk⁣

  • 12oz Clams⁣

  • 3/4 Cup Corn⁣

  • 3/4 Cup Peas ⁣

  • 1/4 Cup White Flour

  • 2 Tbsp Duck Fat, sub Olive Oil

  • 3 Cloves of Garlic⁣

  • Salt & Pepper

  • 2 Tbsp Garlic Powder

  • 2 Tbsp Onion Powder

  • 1/2 Cup Thyme ⁣

Directions:

  1. Chop cauliflower off stalk and place in pot with enough water to cover. Boil on high for 25 minutes.

  2. Drain and puree the cauliflower with 3 garlic cloves.⁣

  3. In a large pot over low-medium heat, add in all ingreidentsand mix all until combined. Cook for 17-20 minutes.⁣

  4. Season to your liking and serve hot.
