
Spinach & Feta Turkey Burgers
Ingredients:
Burgers:
2 Tbsp Olive Oil
1lb Ground Turkey
1 Cup Feta Cheese
1 6oz Bag of Spinach
1 Tbsp Dill, chopped
Salt & Pepper, to taste
Tzatziki sauce:
1/2 Cucumber, grated
1 Cup Plain Greek Yogurt
1 Tbsp Garlic
1 Tbsp Fresh Dill, minced
2 1/2 Tbsp Fresh Lemon Juice
Salt & Pepper, to taste
Other:
5 Mini Cucumbers
1 Cup Grape Tomatoes
5 Whole Grain Hamburger Buns
Directions:
Set grill to medium/high heat.
Chop 1/2 the bag of spinach, keep other half for plating.
Combine 1 Tbsp olive oil, chopped spinach, turkey, feta, dill & garlic in bowl. Mix until combined & form 5 burgers.
Add 1 Tbsp of olive oil to grill. Place burgers on grill about 5-8 minutes each side or until no longer pink.
While burgers are cooking; grate the cucumber & mix all tzatziki sauce ingredients together until combined. Separate out into 5 2oz containers.
Slice mini cucumbers.
Separate remaining spinach, tomatoes, cucumbers, burgers, tzatziki sauce & bun into 5 separate containers.
