Spinach & Feta Turkey Burgers

Ingredients:


Burgers:

  • 2 Tbsp Olive Oil

  • 1lb Ground Turkey

  • 1 Cup Feta Cheese

  • 1 6oz Bag of Spinach

  • 1 Tbsp Dill, chopped

  • Salt & Pepper, to taste

Tzatziki sauce:

  • 1/2 Cucumber, grated

  • 1 Cup Plain Greek Yogurt

  • 1 Tbsp Garlic

  • 1 Tbsp Fresh Dill, minced

  • 2 1/2 Tbsp Fresh Lemon Juice

  • Salt & Pepper, to taste

Other:

  • 5 Mini Cucumbers

  • 1 Cup Grape Tomatoes

  • 5 Whole Grain Hamburger Buns

Directions:

  1. Set grill to medium/high heat.

  2. Chop 1/2 the bag of spinach, keep other half for plating.

  3. Combine 1 Tbsp olive oil, chopped spinach, turkey, feta, dill & garlic in bowl. Mix until combined & form 5 burgers.

  4. Add 1 Tbsp of olive oil to grill. Place burgers on grill about 5-8 minutes each side or until no longer pink.

  5. While burgers are cooking; grate the cucumber & mix all tzatziki sauce ingredients together until combined. Separate out into 5 2oz containers.

  6. Slice mini cucumbers.

  7. Separate remaining spinach, tomatoes, cucumbers, burgers, tzatziki sauce & bun into 5 separate containers.
