Spinach & Mushroom Mac & Cheese

Ingredients:

  • 12oz Box of Banza Pasta

  • 3 tbsp Grass-fed Butter

  • 1/4 cup All-purpose Flour

  • 1/2 Onion

  • 2 Cups Fair Life Milk

  • 1 cup Broth

  • 8oz Cheese

  • 4 Cups Spinach

  • 2 Cups Mushrooms

  • 5 Tbsp Parmesan Cheese

  • 5 Tbsp Panko Breadcrumbs

  • 1 Tbsp Olive Oil

  • Salt & Pepper (garlic optional)

Directions:


  1. Boil pasta for 8-9minutes. Strain, and set aside.

  2. In a large skillet, heat 1 tbsp of olive oil. Cook down the mushrooms and onions. Set aside.

  3. In the same skillet, add butter & melt. Then, add flour and brown (around 2 minutes).

  4. Add milk and chicken broth, then bring to a boil.

  5. Once mixture is thickened, turn down heat & add cheese, salt, pepper & garlic powder.

  6. Once all melted, combine all ingredients.

  7. Portion out into 5 servings. Top each portion with 1 tbsp panko and 1 tbsp Parmesan.
