
Spinach & Mushroom Mac & Cheese
Ingredients:
12oz Box of Banza Pasta
3 tbsp Grass-fed Butter
1/4 cup All-purpose Flour
1/2 Onion
2 Cups Fair Life Milk
1 cup Broth
8oz Cheese
4 Cups Spinach
2 Cups Mushrooms
5 Tbsp Parmesan Cheese
5 Tbsp Panko Breadcrumbs
1 Tbsp Olive Oil
Salt & Pepper (garlic optional)
Directions:
Boil pasta for 8-9minutes. Strain, and set aside.
In a large skillet, heat 1 tbsp of olive oil. Cook down the mushrooms and onions. Set aside.
In the same skillet, add butter & melt. Then, add flour and brown (around 2 minutes).
Add milk and chicken broth, then bring to a boil.
Once mixture is thickened, turn down heat & add cheese, salt, pepper & garlic powder.
Once all melted, combine all ingredients.
Portion out into 5 servings. Top each portion with 1 tbsp panko and 1 tbsp Parmesan.
