Stuffed Jack-O-Lantern Peppers

Ingredients:

  • 5 Large Orange Bell Peppers

  • 1 Cup Jasmine Rice

  • 2 Cups Water

  • 1/2 Cup Crushed Tomatoes

  • Salt & Pepper to taste

  • 1 Tbsp Olive Oil

  • 1 Tbsp Garlic Paste

  • 1 Small Onion, diced

  • 1 lb 94% Lean Ground Turkey

  • 1/4 Cup Tomato Paste

  • 1.5 Cups Sharp Cheddar Cheese


Directions:

  1. Preheat oven to 350 F.

  2. In a medium pot, add 2 cups of water to 1 cup of rice. Bring to a boil uncovered. Then, cover and place on low for 15 minutes. Once cooked, stir in crushed tomatoes, salt and pepper. Set aside.

  3. Cut off the tops of the peppers and remove seeds. Carve in your best Jack-o-Lantern face!

  4. Place peppers on foil lined baking sheet. Bake for 8-12 minutes and remove from oven.

  5. In a large skillet over medium heat, add olive oil, garlic, and onion. Cook for 2-3 minutes until fragrant.

  6. Add in ground turkey and cook for 5-8 minutes, or until no longer pink.

  7. Once cooked, add in tomato paste, half of the cheese, and half of the cooked rice. Stir until combined.

  8. Evenly stuff peppers with meat mixture. Top each pepper with remaining cheese and bake for 5 minutes, until cheese is melted.

  9. Evenly distribute remaining rice and 1 stuffed pepper into 5 containers.
