Turkey, Kale & Butternut Squash Soup

Ingredients:

  • 1lb 99% Lean Ground Turkey

  • 2 Italian Turkey Sausage Links

  • 1 Tbsp Olive Oil

  • 2 Cloves Garlic

  • 4 Cups Chicken Broth

  • 1 Can Diced Tomatoes

  • 3 Cups Cubed Butternut Squash

  • 1 Tbsp Italian Seasoning

  • Salt & Pepper, to taste

  • 4 Cups Kale, chopped

  • 1 Container Tortelini

  • 1 Can Cannelloni Beans, drained

  • 2 Tbsp Balsamic Vinegar

Directions:

  1. Turn on instant pot & set to sauté function. Add 1 tbsp olive oil and garlic. Cook until fragrant.

  2. Add in ground turkey & turkey sausage (casings removed), cook until no longer pink.

  3. Add in chicken broth, tomatoes, seasonings, and squash. Simmer stirring occasionally for 5 minutes.

  4. Slowly add in kale, one handful at a time allowing it to wilt. Once kale is added, stir in tortellini and beans.

  5. Add in balsamic vinegar.

  6. Divide into 5 portions & top with Parmesan cheese.
