1lb 99% Lean Ground Turkey
2 Italian Turkey Sausage Links
1 Tbsp Olive Oil
2 Cloves Garlic
4 Cups Chicken Broth
1 Can Diced Tomatoes
3 Cups Cubed Butternut Squash
1 Tbsp Italian Seasoning
Salt & Pepper, to taste
4 Cups Kale, chopped
1 Container Tortelini
1 Can Cannelloni Beans, drained
2 Tbsp Balsamic Vinegar
Turn on instant pot & set to sauté function. Add 1 tbsp olive oil and garlic. Cook until fragrant.
Add in ground turkey & turkey sausage (casings removed), cook until no longer pink.
Add in chicken broth, tomatoes, seasonings, and squash. Simmer stirring occasionally for 5 minutes.
Slowly add in kale, one handful at a time allowing it to wilt. Once kale is added, stir in tortellini and beans.
Add in balsamic vinegar.
Divide into 5 portions & top with Parmesan cheese.
