Chocolate Mini Muffins
Ingredients:
1 Can of Chickpeas
1/2 Cup Ancient Grain Flour (or Blended Oats)
1/2 Cup Unsweetened Applesauce
1/3 Cup Honey
1/4 Cup Peanut Butter
1/4 Cup Cocoa Powder
1/4 Cup Chocolate Chips
2 tsp Vanilla Extract
1 tsp Baking Powder
1/8 tsp Baking Soda
Pinch of Salt
Directions:
Preheat oven to 350F.
Blend all together in a food processor.
Pour batter mix into mini cupcake tin or baking cups. This recipe makes 32 mini muffins.
Bake for 8 minutes, enjoy!
