Summer Pasta Salad

Ingredients:

  • 1 8oz Box Banza Rotini Pasta

  • 1 Cup Cherry Tomatoes, halved

  • 1/2 Red Onion, Chopped

  • 1 Large Yellow Pepper

  • 1 Bunch Raw Parsley

  • 1 Can Chickpeas, drained/rinsed

  • 1 Cup Reduced Fat Feta Cheese

  • 4.5oz Container Wegman's Turkey Pepperoni

Dressing:

  • 1/4 Cup Red Wine Vinegar

  • 1/3 Cup Olive Oil

  • 1 tsp Dried Basil

  • 1 tsp Dried aParsley

  • 1 tsp Oregano

  • 1 tsp Garlic Powder

  • 1 tsp Honey

  • 2 Tbsp Parmesan Cheese

  • Salt & Pepper


Directions:

  1. In a medium sauce pan, cook banza pasta as directed

  2. Cut vegetables: halve cherry tomatoes, chop red onion, chop parsley and dice yellow pepper

  3. Cut turkey pepperoni into bite sized pieces

  4. For the dressing: add all ingredients into a small mixing bowl, whisk until combined.

  5. When pasta is done, rinse with cold water and transfer to a large mixing bowl. Add in veggies, feta cheese, chickpeas & pepperoni- mix until combined.

  6. Once combined, stir in dressing.

  7. Separate into 5 containers
