Butternut Squash Fritters


  • 1 Small butternut squash (1.5 lbs)⁣

  • 2 eggs⁣

  • 1/2 cup flour ⁣

  • 2 tbsp oil (or duck fat)⁣

  • Chives or parsley to top⁣

  • Salt & Pepper

  • Thyme

  • Turmeric ⁣


  1. Peel the butternut squash and grate with a cheese grater.⁣

  2. In a bowl, mix together the grated squash, eggs, flour, and seasonings.⁣

  3. Heat 1 tbsp of oil on a large, flat pan.⁣

  4. Plop 9 fritters on the pan (half the mix) and press flat with a spoon. ⁣

  5. Cook fritters for 3-5 minutes each side, until lightly browned.⁣

  6. Then, round two with another tbsp of oil and the other half of the mix!⁣

Makes 18 fritters⁣
