1 Cup Oat Flour (homemade: using blender or food processor)
1 Cup Shredded Carrots
1 Large Banana
1/2 Cup Milk
1/2 Cup Sweet Potato (baked and peeled)
3 1/2 Tbsp Coconut Oil
2 1/2 Tsp Vanilla Extract
1 Tbsp Apple Cider Vinegar
1/2 Tsp Salt
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
1/2 Tsp Cinnamon
Preheat oven to 350°f, grease mini muffin tin
In a large mixing bowl, mix sweet potato, banana, coconut oil and milk.
Add oat flour and shredded carrots mix.
Add remaining ingredients, slowly adding the milk.
Distribute into mini muffin tin and bake for 20 minutes.
