Healthy Chickpea Cookies with Peanut Butter and Chocolate Chips

These soft and chewy chickpea cookies are the perfect guilt-free treat that’s naturally sweetened with honey and packed with plant-based protein. Made with creamy peanut butter (or cocoa almond butter for a chocolate twist), these cookies are wholesome yet decadent—loaded with melty chocolate chips in every bite.
They’re easy to make in one bowl with simple ingredients, and you’d never guess they’re made from chickpeas! Perfect for a quick dessert, after-school snack, or healthy sweet fix.
Ingredients:
o 1 + 1/4 Cups Butter Beans
o 1/2 Cup + 2 tbsp Peanut Butter OR Cocoa Almond Butter*
o 1/4 Cup Honey
o 2 Tsp Vanilla Extract
o 1 Tsp Baking Powder
o Dash of Salt
o 1/2 Cup Chocolate Chips
Directions:
Preheat oven to 350°f
Using a food processor, blend chickpeas until smooth.
Add remaining ingredients (except chocolate chips) and blend until evenly mixed.
Empty contents into an empty bowl. Mix in chocolate chips
Scoop batter onto cookie sheet and bake for 10 minutes.
*If using natural peanut butter, the batter is more runny. Scoop batter into a mini cupcake tray.
