Ingredients:
2 Cups Cooked Jasmine Rice
1/2 Pineapple, diced
1 Red Pepper, diced
1/2 Onion, diced
2 Eggs, scrambled
3 Green Onions
2 Cloves Garlic, minced
1/2 Cup Cashews
3 Tbsp Chili Garlic Sauce
3 Tbsp Soy Sauce
Salt & Pepper to taste
1 tsp Oil
Directions:
Scramble & cook the eggs, set aside.
Sauté the onion and whites of the green onion, set aside.
Add a Tsp oil to the pan, then cook pineapple and peppers together for 5 minutes until juice is cooked out and the pineapple starts to caramelize. Then, add the garlic and cook for another 1-2min. Set aside.
Add 1 tsp of oil to the pan, then cook cashews until fragrant (about a min.). Add back in the rest of the cooked ingredients, including the cooked rice.
Add in the sauces and seasonings. Gently mix until evenly distributed.
Top with the greens of the green onion
Optional: Add chicken and sesame seeds.
