1lbs 93% Lean Ground Turkey
1 Can Pumpkin Puree
1 Can Black Beans, drained & rinsed
1 Can Fire Roasted Tomatoes
1 Orange Pepper
1 Red Pepper
2 Tbsp Olive Oil
1 Small Onion, chopped
2 Cloves Garlic, minced
1 tsp Cayenne Pepper
2 Tbsp Chili Powder
1 tsp Paprika
1 tsp Cinnamon
2 tsp Cumin
1 Cup Jasmine Rice
1 Cup Shredded Part Skim Cheddar Cheese
In a large saucepan, add 1 Tbsp of olive oil, minced garlic and chopped onion; cook until fragrant.
Add in ground turkey, cook until browned.
Add in remaining ingredients; pumpkin, black beans, fire roasted tomatoes, peppers and seasonings. Cover and simmer on low heat for 10 minutes.
In a pot, add jasmine rice and 1 Tbsp olive oil. Mix on low heat for 60-90 seconds. Then, add 1 1/2 Cups water and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes.
Layer bottom with 1/2 cup of rice, add 1.5-2 cups of chili and top with shredded cheese.
