Pumpkin Turkey Chili

Ingredients:

  • 1lbs 93% Lean Ground Turkey

  • 1 Can Pumpkin Puree

  • 1 Can Black Beans, drained & rinsed

  • 1 Can Fire Roasted Tomatoes

  • 1 Orange Pepper

  • 1 Red Pepper

  • 2 Tbsp Olive Oil

  • 1 Small Onion, chopped

  • 2 Cloves Garlic, minced

  • 1 tsp Cayenne Pepper

  • 2 Tbsp Chili Powder

  • 1 tsp Paprika

  • 1 tsp Cinnamon

  • 2 tsp Cumin

  • 1 Cup Jasmine Rice

  • 1 Cup Shredded Part Skim Cheddar Cheese

Directions:

  1. In a large saucepan, add 1 Tbsp of olive oil, minced garlic and chopped onion; cook until fragrant.

  2. Add in ground turkey, cook until browned.

  3. Add in remaining ingredients; pumpkin, black beans, fire roasted tomatoes, peppers and seasonings. Cover and simmer on low heat for 10 minutes.

  4. In a pot, add jasmine rice and 1 Tbsp olive oil. Mix on low heat for 60-90 seconds. Then, add 1 1/2 Cups water and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes.

  5. Layer bottom with 1/2 cup of rice, add 1.5-2 cups of chili and top with shredded cheese.
