Sweet Potato Fudge Brownies

Ingredients:

  • 3/4 Cup Sweet Potato Baked & Pureed

  • 1 Cup Peanut Butter

  • 1 tsp Pure Vanilla Extract

  • 1/4 Cup + 2 Tbsp Brown Rice Flour

  • 1/2 Cup Mini Chocolate Chips + More for the Top, Optional

  • 2/3 Cup Coconut Sugar

  • 1/4 Cup + 2 Tbsp Cocoa Powder

  • 1 1/2 tsp Baking Soda

  • 1/8 tsp Salt


Directions:

  1. Preheat oven to 325°f. Prepare a 9x9 pan with parchment paper.

  2. Using a food processor, blend the baked sweet potato until smooth.

  3. Add remaining ingredients and blend until evenly mixed. *batter will be thick.

  4. Press dough into the pan and bake for 20 minutes. *It may look underdone when you take it out, but it firms as it cools
