Syrian Cheese Pies

Dough Ingredients:
1 1/4 Cup Warm Water
2 1/4 tsp Active Dry Yeast
1 Tbsp Honey
4 Cups Flour
1/3 Cup Milk Powder
2 Tbsp Coconut Oil or Butter, melted
1 3/4 tsp Salt
Filling Ingredients:
Za’taar (Syrian blend of herbs)
Soft Cheese (I used mozzarella)
Olive Oil
Salt
Directions:
Put water, honey, and yeast in a bowl. Let sit for 5 minutes so the yeast foams up.
Add salt, melted coconut oil or butter, milk powder, and flour. Knead until dough consistency.
Leave in bowl, cover & let rise for 90 minutes.
Shape dough into 2 inch balls, cover & let rise for another 90 minutes.
Roll out the balls into circles.
Cut cheese into rectangles & place along the edge of the center of the rolled out dough. I put about 1.5oz of cheese in each. Baste with olive oil, then sprinkle on 1 Tbsp of za’taar, and a pinch of salt.
Wet the edges to fold & seal the mini hand pie. Use fork to press in edges to avoid the seal breaking.
Place on a greased tray & bake for 30-40 minutes (until slightly golden on edges) at 350°F.
