Syrian Cheese Pies

Dough Ingredients:⁣

  • 1 1/4 Cup Warm Water⁣

  • 2 1/4 tsp Active Dry Yeast⁣

  • 1 Tbsp Honey⁣

  • 4 Cups Flour

  • 1/3 Cup Milk Powder⁣

  • 2 Tbsp Coconut Oil or Butter, melted⁣

  • 1 3/4 tsp Salt ⁣


Filling Ingredients:⁣

  • Za’taar (Syrian blend of herbs)⁣

  • Soft Cheese (I used mozzarella)⁣

  • Olive Oil⁣

  • Salt⁣

Directions:⁣

  1. Put water, honey, and yeast in a bowl. Let sit for 5 minutes so the yeast foams up.⁣

  2. Add salt, melted coconut oil or butter, milk powder, and flour. Knead until dough consistency.

  3. Leave in bowl, cover & let rise for 90 minutes.⁣

  4. Shape dough into 2 inch balls, cover & let rise for another 90 minutes.⁣

  5. Roll out the balls into circles. ⁣

  6. Cut cheese into rectangles & place along the edge of the center of the rolled out dough. I put about 1.5oz of cheese in each. Baste with olive oil, then sprinkle on 1 Tbsp of za’taar, and a pinch of salt.⁣

  7. Wet the edges to fold & seal the mini hand pie. Use fork to press in edges to avoid the seal breaking.

  8. Place on a greased tray & bake for 30-40 minutes (until slightly golden on edges) at 350°F.⁣
